Succotash Relish
 
Makes 8 to 10 servings
Ingredients
  • 1 (14-ounce) package frozen lima beans
  • 2 cups fresh corn kernels
  • 2 jalapeños, seeded and minced
  • 1½ cups chopped tomato
  • ¼ cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic salt
Instructions
  1. Cook lima beans according to package directions. Let cool completely, and place in a large bowl. Stir in corn, jalapeño, tomato, cilantro, oil, vinegar, and garlic salt. Cover and refrigerate for at least 1 hour or up to 2 days.
