Ashley Mac's Greek Pasta Salad

MAKES 11 CUPS
Ingredients
  • 16 ounces penne pasta
  • ⅔ cup olive oil
  • ½ cup mayonnaise
  • ¼ cup fresh lemon juice
  • 1 tablespoon Greek seasoning*
  • 2 (10-ounce) containers grape tomatoes, cut in half (about 3 cups)
  • 1 cup crumbled feta cheese, divided
  • ¾ cup chopped fresh basil, divided
Instructions
  1. Cook pasta according to package directions until al dente in a pot of salted water. Drain, and rinse with cold water; let cool slightly.
  2. In a large bowl, whisk together oil, mayonnaise, lemon juice, and Greek seasoning. Add cooked pasta, tomatoes, ¾ cup feta cheese, and ½ cup basil. Cover and refrigerate for 8 hours.
  3. When ready to serve, top with remaining ¼ cup feta and remaining ¼ cup basil.
Notes
*Adjust seasoning amount to your personal preference.
