Blackberry-Cucumber Caprese Bites
- 20 wooden skewers
- 20 fresh mozzarella balls
- 20 large fresh blackberries
- 1 medium cucumber, cut into 5 (1-inch) rounds, each quartered
- 1 tablespoon sherry vinegar
- 2 teaspoons chopped fresh oregano
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- 3 tablespoons olive oil
- Garnish: fresh oregano leaves
- To each skewer, add 1 mozzarella ball, 1 blackberry, and 1 cucumber piece. Cover and chill until ready to serve.
- In a small bowl, whisk together vinegar, oregano, salt, and pepper. Slowly pour in olive oil, whisking constantly, until fully incorporated.
- Before serving, drizzle skewers with vinaigrette. Garnish with oregano, if desired.
