Mascarpone Cream
 
MAKES ABOUT 3 CUPS
Ingredients
  • 1 (8-ounce) container mascarpone cheese, softened
  • ⅓ cup confectioners’ sugar
  • ¾ teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 1 cup cold heavy whipping cream
Instructions
  1. In the bowl of a stand mixer fitted with the paddle attachment, beat mascarpone, confectioners’ sugar, vanilla, and salt at medium-low speed until combined. Switch to whisk attachment and decrease mixer speed to low; slowly add cream. Increase speed to medium, and beat until light and fluffy, 2 to 3 minutes. Use immediately.
