Radish, Lima Bean, and Cucumber Salad
 
MAKES 6 TO 8 SERVINGS
Ingredients
  • 2 cups frozen baby lima beans, thawed
  • 2 cups quartered radishes
  • 2 cups sliced cucumbers
  • 1 tablespoon kosher salt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon sugar
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • Garnish: fresh radish leaves
Instructions
  1. In a large bowl, combine beans, radishes, cucumbers, and salt. Let stand 15 minutes.
  2. In a small bowl, combine mustard, vinegar, oil, and sugar. Add mustard mixture, parsley, dill, and chives to bean mixture and stir until combined. Garnish with radish leaves, if desired.
