In a large bowl, toss together kale, chard, cabbage, carrot, red onion, cilantro, jalapeño, lime zest and juice, olive oil, salt, and black pepper. Let stand 10 minutes.
Sprinkle with sunflower seeds. Garnish with cilantro, if desired.
