Mediterranean Couscous Salad
- 1 (8.8-ounce) box couscous, prepared according to package directions, and cooled
- ¾ cup diced seedless cucumber
- ¾ cup halved cherry tomatoes
- ½ cup sliced green onion
- ¼ cup fresh lemon juice
- ¼ cup olive oil
- 3 tablespoons white wine vinegar
- 2 tablespoons chopped fresh Italian parsley
- 2 teaspoons chopped fresh oregano
- 2 teaspoons chopped fresh thyme
- ¾ teaspoon kosher salt
- ½ teaspoon ground black pepper
- In a large bowl, combine all ingredients, stirring until well combined. Let stand 15 minutes before serving.
