Maple and Thyme Grilled Brie
 
MAKES 6 TO 8 SERVINGS
Ingredients
  • 1 (8-ounce) wheel Brie cheese
  • 1 teaspoon extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground red pepper
  • 2 tablespoons maple syrup
  • ½ teaspoon chopped fresh thyme
  • Sliced pears, assorted crackers, gingersnaps, and dried figs, to serve
  • Garnish: fresh thyme sprigs, fresh rosemary
Instructions
  1. Place a grill grate or Dutch oven stand about 6 inches above an open fire. Or, preheat oven to 350°.
  2. Cut a shallow crosshatch pattern into one flat side of cheese rind. Place cheese cut side up in an 8-inch cast-iron skillet. Drizzle with oil and gently rub with salt, black pepper, cinnamon, and red pepper. Drizzle with maple syrup and sprinkle with chopped thyme.
  3. Place skillet over grill grate, and cook until cheese is bubbly around edges, about 15 minutes. Or, bake in oven until very soft and bubbly, 15 minutes. Serve with pears, crackers, gingersnaps, and figs. Garnish with thyme and rosemary, if desired.
