Roasted Broccoli with Lemon and Parmesan
 
Makes 8-10 servings
Ingredients
  • 1½ pounds fresh broccoli florets
  • ¼ cup grated fresh Parmesan cheese
  • 1 shallot, thinly sliced
  • 1 tablespoon chopped garlic
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon lemon zest
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon crushed red pepper
  • Garnish: grated Parmesan cheese, lemon zest
Instructions
  1. Preheat oven to 425°. Line a rimmed baking sheet with aluminum foil.
  2. In a large bowl, toss together broccoli, Parmesan, shallot, garlic, olive oil, salt, lemon zest, black pepper, and red pepper until well combined. Transfer to prepared pan.
  3. Bake until slightly browned and tender, about 15 minutes. Increase oven temperature to broil.
  4. Broil until golden brown, 3 to 5 minutes more. Garnish with Parmesan and lemon, if desired.
