Limoncello Frosting
 
Makes approximately 2½ cups
Ingredients
  • 1½ cups unsalted butter, softened
  • 6 ounces cream cheese, softened
  • ¼ cup light corn syrup
  • 2 tablespoons limoncello
  • 1 teaspoon fresh lemon juice
  • 4 cups confectioners’ sugar
  • 1 teaspoon kosher salt
Instructions
  1. In the bowl of a stand mixer, fitted with a paddle attachment, beat butter and cream cheese at medium speed until smooth, about 2 minutes.
  2. Add corn syrup, limoncello, and lemon juice. Continue beating at medium speed for 2 minutes.
  3. Add confectioners’ sugar and salt. Beat at high speed until frosting is fluffy, about 2 minutes. Use immediately, or refrigerate until ready to use.
Notes
Tip: If frosting looks too thin after beating, place frosting over an ice bath to cool down, stirring frequently. Once mixture is cold, beat until fluffy.
