Spray grill rack with nonflammable cooking spray. Preheat grill to medium-high heat (350° to 400°).
In a medium bowl, combine peaches and olive oil, tossing to coat. Grill peach halves, covered with grill lid, for 1 to 2 minutes per side or until golden.
In the container of a blender, combine peaches, peach nectar, shallot, vinegar, salt, and pepper. Blend until smooth. With blender running, gradually add olive oil in a slow steady stream.
