Grits Chocolate Pie
 
MAKES 1 (9-INCH) PIE
Ingredients
  • 1 cup water
  • ¼ cup quick grits
  • ½ teaspoon plus ⅛ teaspoon kosher salt, divided
  • ½ (14.1-ounce) box refrigerated piecrust
  • ⅔ cup evaporated milk
  • ¼ cup unsalted butter
  • 6 ounces dark chocolate (60%) morsels
  • ½ cup sugar
  • 2 tablespoons all-purpose flour
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla
  • Whipped cream, to serve
Instructions
  1. Bring 1 cup water, grits, and ⅛ teaspoon salt to a boil over medium heat. Cook, stirring often, until thickened. Remove from heat, and let cool for 10 minutes.
  2. Preheat oven to 375°. Place piecrust in a 9-inch pie pan, and crimp edges as desired.
  3. In a medium microwave-safe bowl, add evaporated milk, butter, chocolate, sugar, and flour; heat on high for 1 minute. Remove from microwave, and whisk until smooth. Whisk in grits, eggs, vanilla, and remaining ½ teaspoon salt. Pour into prepared pie crust.
  4. Bake until puffed and set in center, 25 to 30 minutes. Serve warm or cold with whipped cream.
