Ingredients

  • 3 slices bacon finely chopped
  • ¼ cup chopped yellow onion
  • 1½ teaspoons minced shallot
  • ⅓ cup apple cider vinegar
  • ¼ cup firmly packed light brown sugar
  • ¼ cup sweetened dried cranberries
  • 1 Granny Smith apple cored and thinly sliced
  • 2 teaspoons chopped fresh thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • 2 (8-ounce) wheels Brie
  • Assorted crisps to serve
  • Garnish: fresh thyme

Method

  1. Preheat oven to 350°. Line a rimmed baking sheet with foil.
  2. In a medium skillet, cook bacon over medium heat until crisp, about 8 minutes. Remove bacon using a slotted spoon and let drain on paper towels, reserving drippings in skillet.
  3. Add onion and shallot to skillet; cook, stirring frequently, until tender, about 5 minutes. Add vinegar, brown sugar, cranberries, apple, thyme, salt, cinnamon, and ginger; bring to a boil over medium-high heat. Reduce heat to medium; simmer, stirring frequently, until thickened, about 5 minutes. Remove from heat and let cool completely.
  4. Place Brie on prepared pan. (Do not remove rind.) Spoon about ½ cup cranberry-apple chutney over each wheel.
  5. Bake until warmed through, about 10 minutes. Garnish with thyme, if desired. Serve with assorted crisps.
