Grilled Corn, Avocado, and Tomato Salad
MAKES 6 SERVINGS
Ingredients
- 4 ears sweet corn, shucked
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1½ teaspoons kosher salt
- ¼ teaspoon crushed red pepper
- 1 pint cherry tomatoes, quartered
- 2 ripe avocados, diced
- ¼ cup sliced yellow onion
- ½ teaspoon minced garlic
- Garnish: fresh cilantro
Instructions
- Heat a large grill pan over high heat. Add corn to pan and grill, turning occasionally, until browned on all sides. Let cool completely. Using a sharp knife, cut kernels off cob. Discard cobs.
- In a large bowl, whisk together cilantro, citrus juices, oil, salt, and red pepper. Add tomato, avocado, onion, garlic, and corn, tossing to combine. Garnish with cilantro, if desired.
