As temperate weather perfect for outdoor entertaining moves into the South, we’re continuing our two-part series on the topic with expert tips for hosting in the open air. SET UP
One of the biggest challenges with get-togethers during this time is choosing a layout that allows for social distancing without making things awkward. Chef Greg Teal of Table 301, a restaurant group and catering business in Greenville, South Carolina, suggests using tables in assorted sizes—some that seat two to four guests and others with room for up to 10. “Everyone has different levels of comfort, and guests who don’t know each other may not want to take off their masks and share a table,” he says.
To remove any guesswork, Greg recommends asking guests about their seating preferences in advance and assigning spaces with place cards based on responses. You can also reserve more secluded areas for high-risk guests. Emily Painter, founder of Palm Beach-based Freshly Set, adds that round tables can help. “The diameter spreads you out but still makes conversation easy and fun,” she explains. Also, use fewer chairs than each table accommodates.When available, it can be beneficial to include seating beyond traditional tables. Stacy Borocz, creator of etúHOME in Atlanta, advocates for incorporating as many options as possible—from a variety of table sizes to relaxed seating areas with plush sofas, chairs, and a coffee table. “This way guests can choose the most comfortable spot without calling attention to their personal perspective,” she says.
Greg takes this one step further, saying a picnic party provides a great setup. “Set blankets and floor cushions or large pillows around the yard with serving trays and pre-packaged baskets for each guest or couple,” he says.
When it comes to serving food and drinks, the experts agree that plated meals are preferable to buffet and family-style spreads. Greg says packaged food and grab-and-go items are another good idea. “We’ve been offering individual hors d’oeuvre and dessert boxes that are completely customizable—everything from charcuterie boards to individual pizzas,” he says.
Personal appetizers have also become Stacy’s go-to with the help of etúHOME’s Mini Charcuterie Boards. “The host prepares these ahead of time, and guests can pick one up and enjoy their very own tasting board,” she says. For beverages, Greg recommends getting creative. “Offer things like individual Champagne bottles with a cute straw, adult juice boxes with a custom tag or logo, clear bagged drinks with a fun garnish, mini bottle cocktails—think outside the ordinary,” he says. ETIQUETTE TIPS
As Southerners, etiquette as both a host and a guest is always a priority, so it’s prudent to consider new customs that have arisen during this time of uncertainty. The top piece of advice was unanimous: keep the lines of communication open. “It’s nice to set expectations in advance,” Greg says. “Everyone has a different opinion and comfort level, but you don’t want to surprise people at the door one way or another.” Emily says you should be sure to let guests know what precautions you are taking before the event, so they can decide if they feel comfortable coming.
“We believe the more transparent the host is with the actual invite, the better the party will be,” Stacy says. She recommends tactfully outlining the location, number of people invited, instructions for entering, and other pertinent details, such as whether you’ll require masks or make them available.
Stacy suggests thoughtful wording along these lines: “‘Please join us and six of our neighbors for a casual and intimate alfresco evening. Feel free to park in the driveway and meet us around back.’ Being clear upfront helps alleviate any concerns. This provides for relaxed company, which is an important prerequisite for any party,” she says. SPECIAL TOUCHES
While these added precautions are necessary, it’s equally important to ensure that they don’t dampen the mood or hinder guests from enjoying themselves. Have fun with them! Many of these considerations actually present hosts with extra opportunities to incorporate special inclusions to make guests feel all the more welcome.
Emily and Greg agree that masks and mini hand sanitizer bottles are the perfect choices for party favors. You can have them custom-made for your event or include tags with catchy phrases like “Spread Love Not Germs.” Emily recommends passing out cold Purell towels for an elevated touch. “Anything you can do to let your guests know you care about their safety will go a long way,” she says.
Greg also suggests finding gracious ways to remind guests to social distance. “Creative signs and posters with a bit of humor around the party area will help, so you can enjoy the party as the host without having to enforce the rules,” he says.
