Lemon-Lime Icebox Pie
MAKES 1 (9-INCH) PIE
Ingredients
- 1½ cups round buttery cracker crumbs (about 45 crackers)
- 7 tablespoons sugar, divided
- 6 tablespoons unsalted butter, melted
- 2 tablespoons boiling water
- 1 (0.25-ounce) packet unflavored gelatin
- 4 ounces cream cheese, softened
- 1 cup sweetened condensed milk
- 1 teaspoon lemon zest
- 1 teaspoon lime zest
- ¼ cup fresh lemon juice
- ¼ cup fresh lime juice
- ¼ teaspoon kosher salt
- 1½ cups cold heavy whipping cream, divided
- ½ teaspoon vanilla extract, divided
- Garnish: lemon slices and zest, lime slices and zest
Instructions
- Preheat oven to 350°. Spray a 9-inch pie plate with cooking spray.
- In a medium bowl, stir together cracker crumbs and 4 tablespoons sugar. Add melted butter, 1 tablespoon at a time, stirring just until dry ingredients are moistened. Press mixture into bottom and up sides of prepared plate.
- Bake until lightly browned, about 10 minutes. Let cool completely.
- In a small bowl, whisk together 2 tablespoons boiling water and gelatin; let cool to room temperature but still pourable.
- In a stand mixer fitted with the paddle attachment, beat cream cheese at medium speed until smooth. Add sweetened condensed milk and gelatin mixture; beat until smooth and well combined. Beat in citrus zests and juices, and salt. Transfer mixture to a large bowl.
- Clean mixer bowl. Using the whisk attachment, beat ½ cup cold cream at high speed until soft peaks form. Gradually add 1 tablespoon sugar and ¼ teaspoon vanilla, beat until stiff peaks form. Gradually fold whipped cream into cream cheese mixture until fully combined and no streaks remain. Spoon cream cheese mixture into cooled crust, smoothing top with offset spatula. Cover and refrigerate until firm, at least 2 hours.
- Before serving, beat remaining 1 cup cold cream, remaining 2 tablespoons sugar, and remaining ¼ teaspoon vanilla at high speed until stiff peaks form. Top pie with whipped cream. Garnish with citrus slices and zest, if desired. Serve immediately.
