Ingredients
  1. 1 (16-ounce) box rotini pasta, cooked and rinsed
  2. 1 (16-ounce) jar mild giardiniera (pickled vegetables), drained and chopped
  3. 1 cup chopped green olives
  4. 1 cup chopped black olives
  5. 1 cup chopped roasted red bell peppers
  6. 1 (8-ounce) package Havarti cheese, cut into 1/4-inch cubes
  7. 1/2 pound salami, cut into ½-inch cubes
  8. 1/2 pound mortadella ham, cut into 1/2-inch cubes
  9. 1/4 cup chopped fresh parsley
  10. 2 tablespoons finely chopped capers
  11. Zesty White Wine Vinaigrette (recipe follows)
Instructions
  1. In a large bowl, combine pasta, giardiniera, olives, red bell peppers, cheese, salami, ham, parsley, and capers. Pour Zesty White Wine Vinaigrette over pasta mixture, tossing gently to coat.

  2. 1 teaspoon Dijon mustard
  3. 1 teaspoon salt
  4. 1 teaspoon crushed red pepper
  5. 1/2 teaspoon garlic powder
  6. 1/2 teaspoon ground black pepper
  7. 1/2 cup light olive oil
Instructions
  1. In a small bowl, whisk together vinegar, mustard, salt, crushed red pepper, garlic powder, and black pepper. Gradually whisk in olive oil.
