Multicolored Slaw
 
MAKES 6 TO 8 SERVINGS
Ingredients
  • 2 cups thinly sliced fresh kale
  • 2 cups thinly sliced fresh rainbow chard
  • 1 cup thinly sliced fresh red cabbage
  • ½ cup shredded carrot
  • ¼ cup thinly sliced red onion
  • ¼ cup roughly chopped fresh cilantro
  • 2 tablespoons halved, seeded, sliced jalapeño pepper
  • ½ teaspoon lightly packed lime zest
  • ¼ cup fresh lime juice
  • 2 tablespoons olive oil
  • 1½ teaspoons kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup roasted, salted sunflower seeds
  • Garnish: chopped fresh cilantro
Instructions
  1. In a large bowl, toss together kale, chard, cabbage, carrot, red onion, cilantro, jalapeño, lime zest and juice, olive oil, salt, and black pepper. Let stand 10 minutes.
  2. Sprinkle with sunflower seeds. Garnish with cilantro, if desired.
