This delicious Prime Rib with Horseradish Cream is best served medium rare to well done, this classic special-occasion favorite is bound to cause a stir when the enticing aroma wafts from the kitchen. Ingredients
  1. 2 teaspoons garlic powder
  2. 2 teaspoons onion powder
  3. 2 teaspoons salt
  4. 1/2 teaspoon ground black pepper
  5. 1 (6 1/2- to 7-pound) prime rib
  6. 1 tablespoon olive oil
  7. 1 recipe Horseradish Cream (recipe follows)
  8. Garnish: fresh parsley
Instructions
  1. In a small bowl, combine garlic powder, onion powder, salt, and pepper. Rub prime rib with olive oil and spice mixture. Cover, and refrigerate for 4 hours to overnight. Remove from refrigerator, and let come to room temperature.
  2. Preheat oven to 325°. Place prime rib in a roasting pan on a rack. Cook for 2 hours and 45 minutes to 3 hours, or until a meat thermometer inserted into center reaches an internal temperature of 145°, or desired degree of doneness. Remove from oven, and let stand for 10 minutes before carving. Garnish with fresh parsley, if desired. Serve with Horseradish Cream.

  2. 1/2 cup mayonnaise
  3. 3 tablespoons prepared horseradish
  4. 2 tablespoons stone-ground mustard
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon ground black pepper
  7. Garnish: fresh chives
Instructions
  1. In a medium bowl, combine sour cream, mayonnaise, horseradish, mustard, salt, and pepper. Cover, and chill for 1 hour before serving. Garnish with fresh chives, if desired.
