Smoky Pimiento Cheese Tea Sandwiches

Smoky Pimiento Cheese Tea Sandwiches

Ingredients
  • 1 (8-ounce) package smoked Gouda cheese, shredded
  • 1 (7-ounce) package smoked Cheddar cheese, shredded
  • ¾ cup mayonnaise
  • 1 (4-ounce) jar diced pimientos, drained
  • 2 tablespoons chopped pickled banana peppers
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional)
  • 10 slices hearty white bread
Instructions
  1. In a large bowl, stir together both cheeses, mayonnaise, pimientos, banana peppers, Dijon, and hot sauce, if using, until well combined. Cover and refrigerate for up to 1 week.
  2. Spread a thick layer of pimiento cheese mixture onto 5 bread slices. Cover with remaining bread slices to make 5 sandwiches.
  3. Using a serrated bread knife, trim and discard crusts from sandwiches. Cut each sandwich into 4 rectangles. Serve immediately or cover with damp paper towels, place in a covered container, and refrigerate until ready to serve, up to 1 hour.
