
Sweet Potato Sausage Balls

Ingredients
- 1 teaspoon olive oil
- 1 tablespoon minced shallot
- 1 tablespoon minced seeded jalapeño
- ¾ cup all-purpose flour
- ¾ cup plain yellow cornmeal
- 1 teaspoon baking powder
- 2 teaspoons kosher salt
- ¼ teaspoon ground red pepper
- 1 pound ground mild pork sausage
- 1 cup sweet potato purée
- ½ (8-ounce) package cream cheese, softened
- 1 cup shredded sharp Cheddar cheese
- Pepper jelly, to serve
Instructions
- Preheat oven to 375°. Line a rimmed baking sheet with foil.
- In a medium skillet, heat olive oil over medium-high heat. Add shallot and jalapeño; cook until softened, about 5 minutes.
- In a large bowl, whisk together flour, cornmeal, baking powder, salt, and red pepper. Stir in shallot mixture, sausage, sweet potato, cream cheese, and Cheddar until well combined. Shape mixture into 1-inch balls. Place on prepared pan.
- Bake until golden brown, 12 to 15 minutes. Serve warm with pepper jelly.
