Sweet Potato Sausage Balls

Ingredients
  • 1 teaspoon olive oil
  • 1 tablespoon minced shallot
  • 1 tablespoon minced seeded jalapeño
  • ¾ cup all-purpose flour
  • ¾ cup plain yellow cornmeal
  • 1 teaspoon baking powder
  • 2 teaspoons kosher salt
  • ¼ teaspoon ground red pepper
  • 1 pound ground mild pork sausage
  • 1 cup sweet potato purée
  • ½ (8-ounce) package cream cheese, softened
  • 1 cup shredded sharp Cheddar cheese
  • Pepper jelly, to serve
Instructions
  1. Preheat oven to 375°. Line a rimmed baking sheet with foil.
  2. In a medium skillet, heat olive oil over medium-high heat. Add shallot and jalapeño; cook until softened, about 5 minutes.
  3. In a large bowl, whisk together flour, cornmeal, baking powder, salt, and red pepper. Stir in shallot mixture, sausage, sweet potato, cream cheese, and Cheddar until well combined. Shape mixture into 1-inch balls. Place on prepared pan.
  4. Bake until golden brown, 12 to 15 minutes. Serve warm with pepper jelly.
