Double Cheese Grits

Double Cheese Grits
 
Makes 4 servings
Ingredients
  • 3 cups chicken broth
  • 1¼ cups whole milk, divided
  • 2 tablespoons unsalted butter
  • 1 cup stone-ground grits
  • 2¼ cups shredded Cheddar cheese
  • 1 cup grated Parmesan cheese
  • ¼ cup chopped fresh chives
  • Garnish: ground black pepper, chopped fresh chives
Instructions
  1. In a large pot, bring broth, 1 cup milk, and butter to a boil over medium-high heat. Whisk in grits; cover and reduce heat to medium-low. Cook, stirring occasionally, until grits are tender and thickened, about 30 to 35 minutes. Remove pot from heat. Whisk in Cheddar, Parmesan, and remaining ¼ cup milk until smooth. Gently stir in chives.
  2. Spoon grits into serving dish. Garnish with pepper and chives, if desired.
