MAKES ABOUT 3 CUPS
Ingredients
  • 1 cup mayonnaise
  • ½ cup chopped toasted pecans
  • ⅓ cup finely chopped green onion
  • 2 tablespoons pimientos, drained
  • 1 tablespoon apple cider vinegar
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon ground red pepper
  • 1 (8-ounce) block sharp white Cheddar cheese, coarsely shredded
  • 4 ounces smoked Gouda cheese, coarsely shredded
  • 4 ounces goat cheese, crumbled
  • Crackers, to serve
  • Garnish: chopped green onion
Instructions
  1. In a large bowl, stir together mayonnaise, pecans, green onion, pimientos, vinegar, black pepper, and red pepper. Add cheeses, folding until well combined. Serve with crackers and garnish with green onion, if desired.
