Grilled Corn, Avocado, and Tomato Salad
 
MAKES 6 SERVINGS
Ingredients
  • 4 ears sweet corn, shucked
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1½ teaspoons kosher salt
  • ¼ teaspoon crushed red pepper
  • 1 pint cherry tomatoes, quartered
  • 2 ripe avocados, diced
  • ¼ cup sliced yellow onion
  • ½ teaspoon minced garlic
  • Garnish: fresh cilantro
Instructions
  1. Heat a large grill pan over high heat. Add corn to pan and grill, turning occasionally, until browned on all sides. Let cool completely. Using a sharp knife, cut kernels off cob. Discard cobs.
  2. In a large bowl, whisk together cilantro, citrus juices, oil, salt, and red pepper. Add tomato, avocado, onion, garlic, and corn, tossing to combine. Garnish with cilantro, if desired.
