
Honey and pomegranate arils dress up grilled peaches for a tasty summertime dessert.
Grilled Peaches with Greek Yogurt and Honey
MAKES 6 SERVINGS
Ingredients
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter, melted
- 3 slightly firm yellow peaches, halved, and pitted
- 6 tablespoons vanilla Greek yogurt
- 6 teaspoons honey
- Pomegranate arils, for sprinkling
- Garnish: fresh mint
Instructions
- In a small bowl, combine olive oil and melted butter. Heat a cast-iron grill pan over medium-high heat. Brush pan and cut sides of peach halves with olive oil mixture. Grill peach halves, cut sides down, until browned, about 2 to 3 minutes.
- Transfer peaches to serving dish. Top each peach half with 1 tablespoon yogurt and then drizzle each peach with 1 teaspoon honey. Sprinkle with pomegranate arils; top with mint, if desired.
