Multicolored Slaw
MAKES 6 TO 8 SERVINGS
Ingredients
- 2 cups thinly sliced fresh kale
- 2 cups thinly sliced fresh rainbow chard
- 1 cup thinly sliced fresh red cabbage
- ½ cup shredded carrot
- ¼ cup thinly sliced red onion
- ¼ cup roughly chopped fresh cilantro
- 2 tablespoons halved, seeded, sliced jalapeño pepper
- ½ teaspoon lightly packed lime zest
- ¼ cup fresh lime juice
- 2 tablespoons olive oil
- 1½ teaspoons kosher salt
- ½ teaspoon ground black pepper
- ¼ cup roasted, salted sunflower seeds
- Garnish: chopped fresh cilantro
Instructions
- In a large bowl, toss together kale, chard, cabbage, carrot, red onion, cilantro, jalapeño, lime zest and juice, olive oil, salt, and black pepper. Let stand 10 minutes.
- Sprinkle with sunflower seeds. Garnish with cilantro, if desired.
