Tropical Key Lime Pie
Makes 1 (9-inch) pie
Ingredients
Crust:
- 1¼ cups crushed vanilla wafers
- ½ cup finely chopped macadamia nuts
- ¼ cup firmly packed brown sugar
- 5 tablespoons butter, melted
Filling:
- 2 (14-ounce) cans sweetened condensed milk
- 2 large eggs
- 2 egg yolks
- ¾ cup Key lime juice
- ¼ cup sour cream
- Garnish: sweetened whipped cream, toasted coconut flakes, chopped macadamia nuts, lime slices
Instructions
- Preheat oven to 350°.
- For crust: In a large bowl, stir together crushed vanilla wafers, nuts, and brown sugar. Add melted butter, stirring to combine. Press mixture into bottom and up sides of a 9-inch pie plate.
- For filling: In a large bowl, whisk together condensed milk, eggs, and egg yolks until smooth. Add lime juice, whisking until combined. Whisk in sour cream. Pour mixture into prepared crust.
- Bake until center is set, 25 to 30 minutes. Let cool completely at room temperature. Cover and refrigerate for at least 4 hours before serving. Garnish with whipped cream, coconut, macadamia nuts, and lime slices, if desired.
