Roasted Broccoli with Lemon and Parmesan
Makes 8-10 servings
Ingredients
- 1½ pounds fresh broccoli florets
- ¼ cup grated fresh Parmesan cheese
- 1 shallot, thinly sliced
- 1 tablespoon chopped garlic
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- ½ teaspoon lemon zest
- ¼ teaspoon ground black pepper
- ⅛ teaspoon crushed red pepper
- Garnish: grated Parmesan cheese, lemon zest
Instructions
- Preheat oven to 425°. Line a rimmed baking sheet with aluminum foil.
- In a large bowl, toss together broccoli, Parmesan, shallot, garlic, olive oil, salt, lemon zest, black pepper, and red pepper until well combined. Transfer to prepared pan.
- Bake until slightly browned and tender, about 15 minutes. Increase oven temperature to broil.
- Broil until golden brown, 3 to 5 minutes more. Garnish with Parmesan and lemon, if desired.
